Fresh Lemonade



  Fresh Lemonade


 Prep time: 10 minutes

   Serves 6
 

Ingredients

 -1 cup sugar (can reduce to 3/4 cup    -1 cup water (for the simple syrup)    -1 cup lemon juice    -3 to 4 cups cold water (to dilute) 

Method

1 Make simple syrup by heating the sugar and water in a small saucepan until the sugar is dissolved completely.
2- While the sugar is dissolving, use a juicer to extract the juice from 4 to 6 lemons, enough for one cup of juice.
3- Add the juice and the sugar water to a pitcher. Add 3 to 4 cups of cold water, more or less to the desired strength. Refrigerate 30 to 40 minutes. If the lemonade is a little sweet for your taste, add a little more straight lemon juice to it.

 

 Serve with ice, sliced lemons

Spicy Potatoes

Spicy Potatoes

Prep Time :10 mins ,Cooking Time:40 mins

Servings: 6

 

Ingredients 


   -500g potatoes cut into desired shape wash and dry
   - 1 tbsp of minced garlic
   - 1tsp of dried Basil
   - 2 tbsp fresh coriander chopped
   - 2 tbsp of lemon juice
   -2 tsp of cumin
   - 1/4 tsp paprika
   - 1 tbsp of Extra Virgin Olive oil
   - 2 tsp of  Salt
   -1 tsp of red pepper flakes



Method

 - Melt butter or olive oil in deep dish fry pan.
 - Mix all the ingredients together in a container.
 - Add the potatoes to the hot oil.
 - Cover and let cook for about 5-7 minutes.
 - Add the mixed spices with a table spoon by sprinkling over  the top and mixing in real good. Try to cover as much of the potatoes as possible with the spice.
 -Cook uncovered, while turning periodically until potatoes are as crispy or as done as you like them.
 

   serve as a side dish with pita bread or as a side dish.

Italian Pizza






 Italian Pizza





Total time required Total time: 40 mins

Serves 4

Ingredients:
  
For the Pizza Dough base
    -500g plain flour
    -1 tbsp (15g) fast-action dried yeast
    -1cup (250ml) lukewarm water
    -½ tsp salt
    - 2 tbsp olive oil


For the Topping
   - 6 tablespoons tomato pizza sauce
   - 6 tomatoes, sliced
   - 3 tablespoons dried mixed Italian herbs
   -300g mozzarella cheese, thinly sliced
   - Basil leaves, to garnish





Method:
1- Put the flour in a mixing bowl, stir in the yeast and salt. Add 2 tbsp of olive oil ,the water, then mix to a dough. Knead on a floured surface for 10 minutes.

2- Roll the dough into a ball, and place in a lightly oiled bowl. Cover loosely with oiled cling film. Leave in a warm place until the dough has doubled in size.


3-Preheat the oven to 200°C, heat two 25cm metal pizza trays in the oven for 30 mins.
 
4-remove trays from oven and brush with oil,  stretch two portions of the dough to fit pizza trays allow to rest for few mins.

5-Sprinkle the top of the dough with a thin layer of grated mozzarella cheese. Once the cheese is about half-way melted, spoon on a thin layer of tomato sauce, using the back of the spoon to spread over the cheese. Sprinkle the top of the tomato sauce then arrange the sliced tomatoes with a little more cheese on top. Bake in the oven for about 12-15 minutes until the golden brown, then serve, scattered with basil leaves.


    Serve immediately
