Pide (Turkish Pizza)

Pide (Turkish Pizza)



Prep time: 1 hour
Cook time: 20 mins

Serves: 4-6


Ingredients
- Dough:
3 cups whole wheat flour
1 tbsp instant yeast
2 tsp salt
1 tsp sugar
1 cup lukewarm water
¼ cup olive oil
2 tbsp extra olive oil to brush pides 


- Filling:
3 tbsp olive oil
250g ground beef
1 onion, chopped
1 green pepper, chopped
1 red bell pepper, chopped
A handful of parsley, chopped
1 tsp salt
1 tsp black pepper
1 tsp red pepper flakes
A pinch of cumin

Instructions
1-Mix flour, instant yeast, sugar and salt.
2-Pour olive oil and add water little by little. Use your hand to combine them well until you have a soft dough.
3-Cover it and wait to rise for an hour.
4-Heat olive oil in a skillet.
5-Add ground beef and onion, cover it so that it releases its water.
6-When it starts to absorb its water, add peppers and spices, stir.
7- Cook it for about 10 minutes stirring occasionally.
8- Let it cool. Add chopped parsley when it cools.
9-Preheat oven at 180C.
10-Dust a little flour on the counter or on a wooden board.
11-Make a log from dough and cut it into 16-18 eaqual balls.
12-Dust the counter again and roll one of the balls out thin giving it an oval shape.
13-Put some filling in it and stick the edges of pide.
14-Repeat the same steps until you finish all balls.
15-Brush each pide with olive oil and bake them at 180C until golden, for about 20 minutes.


16-You can use a frying pan to cook it. Using medium heat, cook uncovered for 3 minutes then lower the heat and cover and cook for 4 minutes. Lastly, uncover and cook for a further 2 minutes.

Italian Style Meatballs & Spaghetti


Italian Style Meatballs & Spaghetti

Cook Time : 30 mins
Ready Time : 1 hour

Servings :6



Ingredients

For the Meatballs

- 500g minced beef
- 2 eggs
- 3/4 cup dry breadcrumbs
- 1/4 cup fresh parsley, chopped
- 1 garlic clove, minced
- 1/2 teaspoon salt


For the sauce:

- 3 tbsp olive oil
- 4 garlic cloves, crushed
-2 x 400g cans chopped tomato
-1\2 cup of finely chopped parsley.
-1 tsp of salt
-1 tsp black pepper
-few basil leaves


The rest:

-500g spaghetti
-Salt
-olive oil





Method

Meatballs:
1- preheat the oven to 350 degrees.
2-prepare baking sheet with tin foil.
3-put all meatball ingredients in a mixing bowl and mix well .
4-roll meatball and place over baking sheet
5- bake at 350 degree for about 10 mins







Tomato sauce:
1-Heat the oil in your largest pan.
2- Add the garlic and sizzle for 1 min. Stir in the tomatoes, parsley and seasoning. Simmer for 15-20 mins until slightly thickened. Stir in the basil leaves. 
3-then add the cooked meatballs to the pan to keep warm while you boil the spaghetti.






Spoon the sauce and meatballs over spaghetti, or stir them all together and serve with extra Parmesan and a few basil leaves, if you like.

Italian Pizza






 Italian Pizza





Total time required Total time: 40 mins

Serves 4

Ingredients:
  
For the Pizza Dough base
    -500g plain flour
    -1 tbsp (15g) fast-action dried yeast
    -1cup (250ml) lukewarm water
    -½ tsp salt
    - 2 tbsp olive oil


For the Topping
   - 6 tablespoons tomato pizza sauce
   - 6 tomatoes, sliced
   - 3 tablespoons dried mixed Italian herbs
   -300g mozzarella cheese, thinly sliced
   - Basil leaves, to garnish





Method:
1- Put the flour in a mixing bowl, stir in the yeast and salt. Add 2 tbsp of olive oil ,the water, then mix to a dough. Knead on a floured surface for 10 minutes.

2- Roll the dough into a ball, and place in a lightly oiled bowl. Cover loosely with oiled cling film. Leave in a warm place until the dough has doubled in size.


3-Preheat the oven to 200°C, heat two 25cm metal pizza trays in the oven for 30 mins.
 
4-remove trays from oven and brush with oil,  stretch two portions of the dough to fit pizza trays allow to rest for few mins.

5-Sprinkle the top of the dough with a thin layer of grated mozzarella cheese. Once the cheese is about half-way melted, spoon on a thin layer of tomato sauce, using the back of the spoon to spread over the cheese. Sprinkle the top of the tomato sauce then arrange the sliced tomatoes with a little more cheese on top. Bake in the oven for about 12-15 minutes until the golden brown, then serve, scattered with basil leaves.


    Serve immediately

Spinach Pizza

Spinach Pizza

 10 mins to prepare and 15 mins to cook
 This Recipe makes 4 servings

 

 

ingredients 

The Dough:
-2 cups (250 g) flour
-1 tsp Instant yeast
-1\2 Tbsp Sugar – Or to taste
-1\4 tsp  Salt
-1\2 cup Water (lukewarm)
-3 Tbsp Olive oil
Topping:
-2tsp olive oil
-2 cloves garlic, mince
-250 grams frozen chopped spinach, thawed,very well drained  OR 1cup fresh baby spinach
-1 cup shredded mozzarella cheese
-ground black pepper & salt
-1 large onion


Method


1-Put the flour in a bowl. Make a well and add the yeast. Add the sugar and salt, then pour the water and activate the yeast for 2 minutes.
2-Add the oil, then mix all the ingredients and knead for 10 minutes.
3-Cover the dough and let rise for 1 hour.
4-Roll out the dough to 1/4-inch thickness.
5-In a small bowl, toss the spinach, oil and garlic,black pepper & salt.
6-Spread a layer of topping on top of the dough ,place onions on top; sprinkle with the cheese.
7-Bake at 450° for 10-15 minutes or until cheese is melted and edges are lightly browned.
