Baba Ganoush

Baba Ganoush






- 4 servings
- Prep time:25 minutes
- Cook time:40 minutes


Ingredients:
-2 medium eggplants
-1/4 cup (60 ml) tahini (sesame paste)
-1/4 cup (60 ml) lemon juice
-2 to 3 garlic cloves, finely minced
-1/4 teaspoon ground cumin
-1/2 teaspoon Ground black pepper
-1/2 teaspoon salt
-olive oil


Method:


1-Slice the eggplant in half, then drizzle with 2 teaspoons of olive oil and sprinkle with a quarter teaspoon of salt and a quarter teaspoon of ground black pepper. Roast the eggplant in a preheated oven at 450°F/232°C for 40 minutes or until soft.





2-Remove from oven, and allow to cool slightly, then scoop out inside of eggplant, leaving skin behind.




3-Place eggplant, lemon juice, tahini,and garlic in an electric blender, and puree. Season with salt and pepper and  ground cumin  to taste. Transfer eggplant mixture to a medium size mixing bowl, and slowly mix in olive oil. 



(keep refrigerated until serving)

Smooth Hummus

Smooth Hummus


  10 mins to prepare and 10 mins to cook


 This recipe makes 4 servings



ingredients 

-2 cups cooked chickpeas
-2 tbsp lemon juice
-1 garlic clove
-1\4 tsp salt
-2 tbsp tahini (sesame seed paste)
-1\4 cup water
-2 tbsp extra virgin olive oil
-1 tsp paprika


Method
1-place all the ingredients , except the olive oil in food processor
2-blend for 3mins.
3- scrape the sides and blend for 2 mins , scrape again and blend for 3mins
4-Serve with olive oil and any toppings you prefer.

Tuna nicoise salad

 Tuna nicoise salad

 

10 mins to prepare and 25 mins to cook

 this recipe makes 4 servings

ingredients  

  • 10 romaine lettuce leaves
  • 2 boiled eggs (boiled for 6 minutes)
  • 20 fresh green beans
  • 12 black olives
  • 8 small tomatoes
  • 1 can tuna
  • 4 small potatoes -peeled and cut into bite-size cubes

dressing

  • juice of 1 lemon
  • 1tbsp Olive Oil
  • 1tbsp balsamic vinegar
  • salt and black pepper

 

 

Method

Bring a large pot of salted water to a boil. Add potatoes, and cook until tender but still firm, about 15 minutes. Drain and cool.
Arrange  the lettuce, potatoes, beans, tuna, tomatoes, eggs and olives on a serving platter. then add the olive oil, vinegar, salt and pepper and shake to combine. pour the dressing evenly over the salad to serve.
