Tuna nicoise salad

this recipe makes 4 servings
ingredients
- 10 romaine lettuce leaves
- 2 boiled eggs (boiled for 6 minutes)
- 20 fresh green beans
- 12 black olives
- 8 small tomatoes
- 1 can tuna
- 4 small potatoes -peeled and cut into bite-size cubes
dressing
- juice of 1 lemon
- 1tbsp Olive Oil
- 1tbsp balsamic vinegar
- salt and black pepper
Method
Bring
a large pot of salted water to a boil. Add potatoes, and cook until
tender but still firm, about 15 minutes. Drain and cool.
Arrange
the lettuce, potatoes, beans, tuna, tomatoes, eggs and olives on a
serving platter. then add the olive oil, vinegar, salt and pepper and
shake to combine. pour the dressing evenly over the salad to serve.
