Tuna nicoise salad

 Tuna nicoise salad

 

10 mins to prepare and 25 mins to cook

 this recipe makes 4 servings

ingredients  

  • 10 romaine lettuce leaves
  • 2 boiled eggs (boiled for 6 minutes)
  • 20 fresh green beans
  • 12 black olives
  • 8 small tomatoes
  • 1 can tuna
  • 4 small potatoes -peeled and cut into bite-size cubes

dressing

  • juice of 1 lemon
  • 1tbsp Olive Oil
  • 1tbsp balsamic vinegar
  • salt and black pepper

 

 

Method

Bring a large pot of salted water to a boil. Add potatoes, and cook until tender but still firm, about 15 minutes. Drain and cool.
Arrange  the lettuce, potatoes, beans, tuna, tomatoes, eggs and olives on a serving platter. then add the olive oil, vinegar, salt and pepper and shake to combine. pour the dressing evenly over the salad to serve.

Shish Taouk - grilled chicken kebabs



Shish Taouk -Chicken Kebabs



Preparation time: 15 minutes
Cooking time: 10 minutes.  
 

 Number of servings (yield): 6

Ingredients:


-Chicken breast cubes 400g
-tomatoes
-Red onion
-yellow or green pepper

For the Marinade:
-2tbsp Yoghurt

-1tsp Vinegar
-1tsp Paprika
-3 Garlic cloves (Mashed)
-1/2tsp Black pepper
-Salt
-2tbsp Olive oil

Method:


In a small bowl, mix all the marinade ingredients.
Place the chicken into the mixture, and mix to coat. Cover, place in refrigerator and marinate chicken overnight or at least 2 hours.
Preheat grill to medium heat. Skewer chicken and vegetables.
Grill about 8-10 minutes, or until chicken is cooked through. After removing from grill, place skewers in a large pot or roasting pan and cover with a lid, letting it rest about 10 minutes before serving. This helps the chicken keep moist.

Roasted Chicken Pieces

Roasted Chicken Pieces

Preparation time: 10 minutes.

Cooking time: 20-25 minutes

                                                                                                                                                                                              Ingredients:                                                    

 use any pieces of chicken (breast or leg quarters with skin)
    1/2 cup of lemon juice
    1 garlic head
    3/4 cup of olive oil
    1.5 to 2 teaspoons of salt
    1 teaspoon of A black pepper
                                                         
                                                                                                                                                              
Preparation Method:                                   
In a blender grind the garlic along with the lemon juice,  salt, and black pepper  and olive oil then run the blender for few minute. Your marinade is now ready.
Place chicken in a bowl,  pour marinade on and let sit in the fridge for 2 hrs. The longer you marinate the chicken the more flavor it will have. Once ready for cooking don’t throw away the leftover marinade, you’ll need it later.                            Remove the marinated chicken pieces from the refrigerator and let drain in a strainer approximately 5 minutes.                                                         Grill the marinated chicken on a BBQ , on low to medium heat for about 20 minutes ,In the first 10 minutes of grilling, brush the leftover of the marinade on the chicken occasionally so they stay moist and absorb more marinade flavor.
