Pita Bread

Pita Bread
40 mins to prepare and 15 mins to cook

Ingredients       
-2/3 tsp dry active yeast
-2/3 tsp sugar
-1 tsp salt
-2 tsp olive oil
-1 cup warm water
-3 cups flour

Method
1-add the first five ingredients together and leave them for at least ten minutes covered.
2-mix with the flour.








3-mix up the dough until you get it to bounce back slightly when you press it. it shouldnt be sticky.

4-cover it with flour, leave it to rise covered for at least thirty minutes.

5-divide up the risen dough into eight pieces and roll each one out.

 6-make each protion 15/18 cm in diameter.
7-leave to stand for 10 minutes before baking.
8-dont open the oven too much.
9-take out the bread as soon as it has finished rising.
10-you can freeze it after it has cooled down and reheat it for use later.

Homemade cappuccino

 This Recipe makes 1 servings


1-Measure the amount of milk needed by filling the mug 3/4 of the way with milk.

2-Pour this milk into a small pot and heat, or heat it in the microwave making sure not to boil it.

3-In a separate mug, measure out the amount of instant coffee needed for one cup, then double it to get that espresso taste or you can use Nescafe (Taster's Choice) Gourmet instant coffee.

4-Add the amount of sugar you wish to have with the instant coffee in the mug. Then add tiny drops of hot water on top and keep stirring to dissolve. If not able to dissolve after 90 seconds, add a few more drops of water. Not too much, you want it to be a thick mixture. (The color will turn from dark brown to light brown or beige).

5-Pour hot milk into the mug making sure not to exceed the amount you need. The stronger the coffee, the less milk you'll need. Stir the ingredients with the milk.

6-Now, add some hot water to fill your cup.

7-A few amount of cream can also be added to add texture.

8-Now fix your Cappuccino as you wish (Sprinkle cocoa powder, cinnamon,etc...

Ingredients   
- 1cup of ground semolina (medium or coarse).
-3tablespoons unsalted butter(or margarine).
-2tablespoons of natural set honey.
 
The Decorations

Method
1-In a saucepan heat the semolina over a medium-high heat. Keep shaking the pan until the semolina is evenly toasted & a rich golden brown colour. Pour into a bowl & set aside.

2-Melt the butter / margarine in the empty pan you used to toast the semolina. Remove from the heat & stir in the honey.

3-Pour the semolina back into the pan & mix well to combine it with the butter & honey. If you notice the semolina mixture is too runny or has a little extra butter on top, just add a little extra semolina to the pan. If the semolina mixture is a little too stiff to pour, add 1 teaspoon extra of both the butter & the honey & mix well.

4-Pour the semolina mixture out onto a small dinner plate or side plate & decorate with the cinnamon.

Ingredients
-4 Chicken breast(boneless) 

-3Garlic cloves
-1 lemon
-1/4 cup olive oil
-1Tbsp Black pepper
-1Tbsp salt
-1 bunch fresh thyme sprigs (about 1/2 cup)

Method
1-In a bowl combine the olive oil, minced garlic,lemon juice ,ground black pepper, mix well, in the same bowl marinate the chiken on both sides.

2-on a pan on medium high heat , cook the chicken steaks for more than a 4 minutes on each side.

3- Add some olive oil,and thyme to the pan. Raise the heat to high and baste the steak in the oil for about 2 minutes.Transfer the steak to a plate and let it rest for 5 minutes before serving.

ingredients 

The Dough:
-2 cups (250 g) flour
-1 tsp Instant yeast
-1\2 Tbsp Sugar – Or to taste
-1\4 tsp  Salt
-1\2 cup Water (lukewarm)
-3 Tbsp Olive oil
Topping:
-2tsp olive oil
-2 cloves garlic, mince
-250 grams frozen chopped spinach, thawed,very well drained  OR 1cup fresh baby spinach
-1 cup shredded mozzarella cheese
-ground black pepper & salt
-1 large onion


Method


1-Put the flour in a bowl. Make a well and add the yeast. Add the sugar and salt, then pour the water and activate the yeast for 2 minutes.
2-Add the oil, then mix all the ingredients and knead for 10 minutes.
3-Cover the dough and let rise for 1 hour.
4-Roll out the dough to 1/4-inch thickness.
5-In a small bowl, toss the spinach, oil and garlic,black pepper & salt.
6-Spread a layer of topping on top of the dough ,place onions on top; sprinkle with the cheese.
7-Bake at 450° for 10-15 minutes or until cheese is melted and edges are lightly browned.

 Ingredients 
- 4 Chicken breast(boneless).
- 4 Burger bun.
- 4 Cheese slices.
- Lettuce leaves.
- Tomato.
- onions.
- 4 tbsp Mayonnaise.
- 1 Egg beaten.
-oil. 

 For Marinate:
-Salt.
-1tsp Black pepper.
-4tbsp yogurt.
-1tsp Mustard.


 For Coating:
-1 cup Cornflakes(crushed into small pieces).
-2 cup Flour.
-1/2 tsp Salt.
-1 tsp Baking powder.
-1/2 tsp Crushed black pepper.
-1/4 tsp Paprika powder.
 

Method
1-Mix all the marinade ingredients into a large bowl and dip the chicken in it ,Set aside for 30min to marinate..

2-In a bowl mix the baking powder, flour,  paprika, salt, black pepper.

3-Coat the chicken in flour mixture then dip in the beaten egg and toss in the crushed cornflakes until well coated .
4-Fry in hot oil until golden and crispy.

5-Assemble the burger by spread mayonnaise, Place salad leaves and cheddar slices,Place fried chicken on top of cheese slice and add onions and tomatoes.Place the upper half of bun on top of onions.

this recipe makes 4 servings



ingredients 
-4 boneless, skinless chicken breasts.
-2 eggs.
-Salt and pepper.
-1 tbsp flour.
-1 cup Panko bread crumbs.
-hredded cheeses: mozzarella, Parmesan, and Romano.
-1 tsp dried or chopped fresh oregano.
-Zest from 1 lemon.
-1/2 tsp garlic powder.
-2 tsp olive oil.
-2 tsp vegetable oil.
-Lemon slices or wedges for serving.


 
Method

1- Preheat oven to 350 degrees.
2-Season chicken with salt and pepper,set aside
Sprinkle each side of the chicken breasts lightly with salt,set aside. Combine Mozzarella and Provolone cheese in a bowl, set aside.

3-In a shallow dish, whisk together flour and egg until smooth. In a large zip-lock bag, toss together Panko bread crumbs, Romano cheese, oregano, lemon zest, garlic powder and pepper.

4-Dredge each chicken breast in the egg mixture, coating both sides and allowing excess to run off, then drop them into the zip-lock bag and shake until chicken is fully coated.

5-Heat olive oil and vegetable oil in a medium skillet and heat over medium-high heat. Once oil is hot, fry each breast until bottom is crispy and golden brown, about 2-3 minutes per side.

6-Transfer chicken to a large plate lined with paper towels to drain, then place in a greased baking dish. Sprinkle each breast with the shredded cheese mixture and place in the oven to bake for 12-14 minutes.


7-Remove from oven and garnish with lemon slices or wedges, serve warm.

-2 cups cooked chickpeas
-2 tbsp lemon juice
-1 garlic clove
-1\4 tsp salt
-2 tbsp tahini (sesame seed paste)
-1\4 cup water
-2 tbsp extra virgin olive oil
-1 tsp paprika


Method
1-place all the ingredients , except the olive oil in food processor
2-blend for 3mins.
3- scrape the sides and blend for 2 mins , scrape again and blend for 3mins
4-Serve with olive oil and any toppings you prefer.

Kofta - Turkish Meatballs

Kofta - Turkish Meatballs

 this recipe makes 6 servings 

ingredients  

-500g Ground beef Or lamb
-1 medium onion, grated
-1 cup white breadcrumb
-1 tablespoon water
-2 eggs
-1/4 cup fresh parsley, finely chopped
-1/4 cup fresh mint, finely chopped
-1/2 teaspoon salt
-1/2 teaspoon white pepper

Method

1-In a bowl add all the ingredients and lightly combine mixture. Set aside in the fridge for the flavors to meld at least 2 to 4 hours.
 

2- Take a  skewer and push it through the middle of the ball. Now hold the skewer with one hand and use your other hand to push the skewered meat into the long sausage shape .
 

3-Place the skewers onto a hot barbecue or grill and cook until well browned.
             Serve immediately

-8 Oranges
-½ cup(100 g) Sugar
-½ tsp cinnamon
-4 cups (1 litre) Water
-6 Ice cubes
-4 cinnamon sticks

Method

1-Peel the oranges ,then cut each one into 8 pieces
2-Place the oranges in a blender.
3-Add the sugar,cinnamon, water, and ice cubes
4-Pulse 6 times
5-Pour into a sieve and press with a spoon to extract as much juice as possible

Libyan Asida

Libyan Asida

 

THE RECIPE  


this recipe makes 4 servings

 

ingredients  
  • 25g butter or 2tbsp oil 
  • 1tsp salt
  • 300g flour
  • 1 litre boiling water

    Served with:
    Honey or date syrup
    Melted butter


 Method

1-Fill a deep pot with 1/2 litre hot water. Add 25g butter and a teaspoon of salt.

2-Leave on medium heat until the water starts to boil.

3-Sift the flour then pour it into the pan all at once then remove from heat.

4-Immediately start to stir the flour into the buttery water.

5-Press the dough against the side of the pot to remove lumps. 

6-Once the dough is smooth, with the help of the wooden spoon form it into one lump.

7-Put the pot back on the heat and add another half liter of boiling water.

8-Use the wooden spoon to form some hollows in the dough. Do not cover and leave to cook on low heat until the water is absorbed.  Midway during this process, turn the lump upside down.The dough's cooking takes about 20 minutes. 

9-Remove from heat. Immediately begin kneading, using a wooden spoon to smooth the asida. If you have a machine that will knead bread dough then it will handle asida fine. 

10-Melt about 75g of butter.

11-Brush a wide plate with butter, and place the asida in the center and begin folding in the edges to form a smooth dome.

12- Once the edges are folded in, roll the asida to even out any cracks.

13-Turn upside down and use a buttered ladle to form a hollow in the asida.

14-Pour the melted butter around the asida.

15-Pour honey or date syrup in the hollow. Serve immediately.

Libyan Rice Sausage



THE RECIPE  


ingredients  

  • sheep stomach and/or sheep intestines (casings)
  • 1 sheep pluck (the combined lights, heart and liver) 
  • 4 spring onions, chopped
  • A bunch of parsley, chopped
  • 1 tablespoon of dried mint
  • 2 tablespoons of tomato puree
  • 1 cup of rice 
  • 1 tablespoon of salt
  • 1\2 tablespoon of cayenne pepper
  • 1\2 cup of vegetable oil



Method

Clean the casings with hot water flushing thoroughly and put them in a large bowl. Marinate them with lemon juice and some salt and leave for an hour. Wash to remove the salt and lemon.

Grind the meat through a medium plate or chop very finely.
Chop the vegetables finely
Mix the vegetables, meat, and remainder of ingredients in a large bowl.


Stuff the stomach and/or intestines, but leave room for expansion of the contents. Tie off with butchers twine to seal the casings. if the casing have been stuffed too tight, prick them with a needle or the tip of a sharp knife.

Put 4 cups of water, and some tomato paste and spices in a pan and bring to a boil, reduce heat to medium. Add the Osban and cook until done (do not boil), approx 2 hours.
